Thanks to their flattened section and slightly convex shape, they are perfect for capturing the sauce and bringing out all its variety of flavours. They are excellent simply with butter and sage or combined with fresh tomato-based sauces, with vegetables and herbs, or with spicy quick sauces prepared with extra virgin olive oil, garlic, chilli peppers, anchovies and capers.
